Mayan and Q’echi‘ communities surrounding lake Lachua in Guatemala grow this organic cacao intercropped with bananas, cardamom and coffee. Cacao fruit juice is needed during fermentation, but extra juice can be drained and used to slightly sweeten this special bar.
